I know, I know, I still haven't gotten around to posting that pasta recipe. In the meantime, I thought I'd give you something good to fill your belly and curb that appetite. This is one of my favorite trashy vegetarian meals to make, and if you're cooking for one, the ingredients should enable you to make several of these sandwiches. It's based on a recipe from the Field Roast site, and can be easily made vegan if you prefer. I typically don't measure these ingredients; you can pretty much eyeball it depending on how large—or how many sandwiches—you choose to make.
Ingredients
- Wild Mushroom Field Roast, 2-3 slices, thinly sliced
- 1/8 cup yellow onion, chopped
- 1/8 cup sliced crimini mushrooms
- 1 Tbsp canola or vegetable oil
- 1 Tbsp water
- 1 Tbsp soy sauce, or better yet, Braggs since it's non-GMO and preservative free.
- White cheese. I recommend mozzarella, Rice mozzarella, or provolone
- Salt (preferably kosher) and pepper (preferably fresh ground)
- Sandwich roll
- Mayo or Nayonaise
- Hoagie Spread
If you've never had Field Roast, it's usually found near the eggs, cheese and crappy deli meat section of the grocery store. It looks like a pack of deli slices. Locally made! I got the Hoagie Spread from DeLaurenti's in the Pike Place Market. A great sandwich condiment if you like sweet cherry peppers.
Directions
- In a small to medium skillet (depending on the quantity of sandwiches) heat the oil over medium heat.
- Toast your sandwich roll in a toaster oven, or in an oven on a baking sheet.
- While your roll is toasting, add the onion, mushrooms, and Field Roast to the skillet and saute until onions are translucent (about 5 min.).
- Season with salt and pepper, and add the water and soy sauce (Braggs).
- Let the sauce reduce for about a minute. Pile up the mixture in the pan, top with cheese, and cover it with a lid. Remove skillet from heat.
- Add the mayo (nayo) to one side of the roll and Hoagie Spread to the other. Slide the cheese steak mixture onto your roll, and enjoy!
